How to prepare

SEA CUCUMBER
 
1. soak sea cucumber with clean water for half a day
2. put soaked sea cucumber on the stove (note: don't stick with oil on the stove because it will dissolve sea cucumber) and mix with two spoons of white vinegar (white vinegar allows to remove away grey dust from the skin of sea cucumber easily). Use mild fire to boil for 5-15 minutes and then turn off the fire. Leave it with cover until the next day.
3. Take away sea cucuber from the stove in the next day. Use knife to scrap the grey dust and take the internal organ away.
4. Use clean water to soap for another one or two days (better to leave it into the fringe). Allow sea cucumber to have enough time to absorb water and make it to inflate.
5. before to make a dish, use ginger with boiling water to get away fishery smell
 

 

Fish Maws

1. soak fish maws with cold water overnight.

 

2. Place fish maws into boiling water with sliced lemon in order to remove fishy smell for about ten minutes , turn off fire and let it stay warm while the lid is still on (avoid stains with cooking oil or grease ) , then change with clean water and soak it for three to four hours. If it is not soft enough, repeat steps 1 and 2 ,

 

3. Because the trait of fish maws is heavy, it sinks into the bottom of the pot easily. Using a bamboo layer to separate fish maws and the pot in order to avoid scorching is strongly recommended.  

 

Friendly reminder: Maw will gradually melt if boil for some time ( the time depends on the size of Maw)

 
 
 
 
 

 

Bird's Nest
 
High in moisture and fibre content, bird's nest is naturally rich in protein, carbohydrate, potassium, sodium, calcium and other minerals. The active protein ingredients help in the growth and regeneration of body tissues and cells. Thus, they help to improve your body's immunity system and defense against diseases. How to prepare
1. use clean water to soak for 2-4hours, has to change water often during that period until it swallow than the regular size (don't reuse the previous water again)
2. after soaking, tear it into small pieces. Use stainless steel net to wash it again and leave it there for a while to let it dry up a little bit
3. use outside pot to carry full of hot water and then put the slow cooker with bird's nest and small amount of boiling water into the outside pot. Cook for 30-45 minutes with mild fire slowly.
4. drops some rock sugars into the slow cooker and cook for another 15 minutes before serve
